PRE-ASSEMBLED STRUCTURE

  • Lower oven respect to INDUSTRIA model, this allows it to be placed in smaller spaces;

  • No leaks thanks to the clever use of folds in construction;

  • Simplicity and speed of assembly on site;

  • Ability to fit through any standard 95cm door.

  • The CR model can exceed 300°C.

COOKING UNIFORMITY

  • The oven has an air flow designed to surround the trolley during rotation;

  • Cooking is perfectly uniform on every tray of the trolley, in every part of it;

  • The air flow is directed by adjustable dampers

  • the specially designed lateral gap promotes correct air circulation.

MAINTENANCE AND ACCESSIBILITY

  • A lateral space must be provided for maintenance of the rear heat-exchanger.

  • The burner is posterior;

  • The glass can be removed for easy cleaning;

  • The steamer is fixed and at the full height of the chamber.

HEAT EXCHANGER

 

  • The heat exchanger is made of special thick refractory steel, resistant to high temperatures and equipped with special "wings" for the slow transmission and retention of heat;

  • Its «DIRECT» structure allows the rapid passage of heat through the tubes, even at maximum power, at high temperatures and for very long periods of time;

  • The high number and size of the circular section tubes it is composed of allows for excellent performance.

The fan pushes hot air up to the steamer and sucks in hot air from the combustion chamber.

STEAMER

  • The powerful steamer positioned inside the combustion chamber covers the entire wall for its entire height and guarantees abundant steam production even in the presence of a continuous work cycle, rapid recovery times and homogeneous steam distribution throughout the trolley;

  • The steamer is made up of a very sturdy column with pockets and allows the insertion of both standard rods and the famous cast iron balls;

* "OVERFLOW" SYSTEM: to ensure the smooth running of the process and the safety of the operator, we have designed a vertical chamber separated from the rest of the cooking chamber with an opening and adjustable door that allows the air to escape and the pressure to disperse in the chamber, given by the humidity of the dough.

* VENTS: Our vents to regulate airflow during cooking are made of 430 stainless steel and are as high as the entire cooking chamber. The top and bottom are adjustable every 10 cm, to allow for even cooking from the highest to the lowest pan.
